When this post popped up on my Instagram, I related to it INSTANTLY! How many times have I waited (and waited and waited and waited) for the plant to grow, only to pull it up to find nothing has grown under?! Countless times! In fact, I just pulled up our beetroot a few days ago to find that I only had tiny beetroots?! After all that time in the ground!!
To say I was disappointed was an understatement. Check them out...
However, I wanted the garden bed to plant my spring vegetables, so I decided to harvest them anyway. They had spent far too long in the soil. The leaves were not young and tender anymore, so I could not toss them into a salad, so I decided to stir-fry them for a simple side dish (tiny beetroots included)!
Ingredients
- Beetroot leaves (cut into pieces, any length)
- Garlic (chopped)
- Oil (1 tablespoon)
- Salt to taste
Method
- Heat the oil and fry the chopped garlic until they turn a light brown color.
- Add the beetroot leaves and fry until the juices are released. Continue frying for longer if you prefer a softer texture.
- Add salt to taste.
