Eggs are super versatile as you can serve them as a side dish or a main, depending on the choice of ingredients. In this very simple dish, sliced french beans are added to the eggs and seasoned with some light soy sauce, salt and white pepper. As the egg cooks faster than the french beans, the beans retain their crunchiness, adding texture and interest to the dish. If you do not have light soy sauce, feel free to omit it. We tend to add this dish to our repertoire of dishes to have with rice. It pairs well with our steamed salmon.
Ingredients
Eggs (1 per person)
As much french beans as you like
Light soy sauce
Salt and white pepper
Method
Slice the french beans into tiny pieces as shown in the photo.
Add eggs, soy sauce, salt and white pepper. Beat till well-mixed.
Fry and serve!
