I came up with this recipe in my quest to create a healthy, no-added-sugar, 'fill me up', satisfying sweet treat using fruits as a natural sweetener. You will not miss any sugar in this delicious loaf! However, if you do prefer a sweeter loaf, feel free to add some sugar/maple syrup/honey/sweetener/golden syrup if you'd like to increase the sweetness of it. It is a really easy recipe which can be whipped up within minutes without any special baking equipment (just a bowl, spoon, saucepan and baking tin) or ingredients. The hardest part is waiting for it to bake in the oven before you can eat it!
Ingredients
- 1 cup water
- 1 cup dates
- ½ tsp baking soda
- 60 g butter
- ¾ cup wholemeal flour
- ¾ cup old fashioned oats (ground or left whole for more texture)
- 1 tsp baking powder
- ½ tsp cinnamon
- Pinch of salt
- 1 egg
- ½ cup milk
- ½ cup chopped walnuts
- ½ cup sultanas
Method
- Preheat oven to 180 ℃. Prepare a loaf tin greased with butter or covered with greaseproof paper. I used a loaf tin measuring 25 x 10 x 7.5 cm lined with greaseproof paper.
- Bring the dates and water to the boil over medium heat. Once boiling, turn the heat off and add in the baking soda and butter. Stir until the butter is fully melted and everything is well mixed.
- Add the rest of the ingredients into a bowl.
- Pour the date mixture into the bowl containing the rest of the ingredients and stir until well mixed.
- Bake in the oven for approximately 30-45 min or until a toothpick poked into the loaf comes out clean.
